VINIFICATION: After a light drying of the grapes fermentation with maceration for 10 days at controlled temperaturre (20-22°C ) followed by drawing off and gentle pressing
MATURATION: 8 -12 months in French Oak Tonneau
ALCOHOL: 14% vol.
TOTAL ACIDITY: 5.75 g/lt
RESIDUAL SUGAR: 6.8 g/lt
COLOUR: Ruby red
AROMA: Very fruit forward aromas, in particular cherry and blueberry jam , with spicy notes of black pepper, licorice and vanilla adding further complexity
TASTE: Full bodied, with a good perstistence and an elegant finish with reminiscences of jam
ACCOMPANIMENTS: Per fect with risotto, red meat and matured cheese
SERVING TEMPERATURE: 18 -20°C
